The text will appear to overflow into the next cell. It is only a visual effect. All of the data is still in the initial cell, which you will see if you put the cursor on the initial cell and look at the formula bar. In the same way, if you put the cursor on the next cell that the text appears to flow over, you will see that the formula bar shows it as being empty, which it actually is. As soon as other data is put into that cell, then what is in the initial cell cannot be shown in full, and appears to be truncated. The full content is still in the initial cell. You can either widen the column, or set the text to be wrapped, by using the format menu, going to cells and then alignment and tick the wrap text tick box.

It depends on the formatting and the contents of the adjacent cells. If the adjacent cells to the right are empty and have the same formatting, text from the entry cell will extend as far to the right as necessary, to display all of the text.
