When sugar dissolves its molecules separate and become surrounded by water molecules (the sugar molecule is polar and attracts the polar water molecules). If you don't stir, the water molecules near the sugar are soon all taken up and the remaining sugar molecules can only go into solution as fast as new water molecules diffuse in and collide with them. Stirring rapidly increases the rate at which the new water molecules mix with those already bonded to sugar molecules).

Measure the mass of the hot water, then add sugar. Dissolve the sugar in the water, then weigh it again. A much faster way to see if there is in fact sugar in hot water is tasted it (if it is not too hot).
if you like the tartness of lemon flavor, i would not recommend using only 1 lemon. i personally love lemons and use 4-8 per quart. much of it is personal taste. I have known a person who was not concerned with nutritional value and did not particularly like lemons who made "lemonade" with water, sugar, and lemon extract. i prefer many lemons, water, dash of white vinegar, & a bit of honey. i do not like sweet drinks-preferring a tart, acidic tang.
