When you cook dried spaghetti drain it well then put spicy meatballs on top you get lots of water coming out of the spaghetti which then has to be drained off - Why?

When you drain your noodles, leave it in the strainer in the sink for a minute so the air can get to it, flipping it around a couple of times. The steam that comes off of them and the heat from the meatballs even after they have been drained causes more liquid to seep out of the noodles. Your other option would be to put the noodles back in the empty pot and stir it around in the pot on a medium heat to help evaporate off any excess moisture.
