What is candied citron?

Candied citron is the candied peel of the fruit of the citron tree Citrus medica native to the far east but brought to the Mediterranean around 500BC. The peel or rind is very very thick -up to 3cms and very fragrant and it is this which is of commercial use and is candied. It is best if bought as the half cup as once sliced or diced it will dry out whereas the cup is juicy and succulent. Unfortunately it is now almost impossible to find in the UK but if you holiday in Portugal, Spain or Italy you will be able to get it. It is not cheap as it is only produced in relatively small quantities and as a result is often not found in mixed peel any more.
