'Freek' is the name of the grain (wheat). It is basically charred wheat. It originated in the Levant (modern day Syria, Palestine, Lebanon). Legend has it that as invaders were poised to arrive (centuries ago), the locals burned their wheat fields in hopes that the invaders will not be inclined to stay. When the locals went back to their fields, they found the grain had survived, and in fact had a distinct and pleasant flavor. Hence, freek was born.
