Sushi is a Japanese form of serving rice. The rice is mixed with a touch of vinegar and sugar and is then combined with vegetables, fish (cooked and raw) and other foods to make a combination that is both tasty and visually appealing. Legend has it that an old woman hid her cooked rice in a bird nest to keep it away from pillaging soldiers. When she retrieved it, the bird had left a fish in it. Upon eating the rice, she realized how tasty it was.
It is also believed that sailors would wrap rice in algae in order to preserve it longer. Later they would have added the internal ingredients in order to avoid the excessive use of salt.

It is not certain where the word sushi comes from" but one assumption is that it is a combination of the Chinese word for preserved fish "chee" - which was then converted into Japanese as "shi" - and a simplified word for the Japanese word "sour" or "suppai". So technically, going by this assumption, the word su-shi should mean "sour preserved fish".

Some historians believe that the original form of sushi came somewhere inland along the Mekong River, which was landlocked by China, Laos and northern Thailand. The Mekong River had an abundance of Freshwater Fish. In their quest to learn how to preserve the fish whole - instead of the previous attempts which disintegrated the first into a paste instead - the farmers would pack freshly cleaned and gutted fish with cooked rice with hopes that the fish would stay intact while the rice would decay. The outcome of this preservation method actually produced a fish that did stay in one piece. But the sacrifice was that the taste of the fish had more of an aged cheese flavor, buttery and sour flavor - hence, "sour preserved fish".

It originated in South East Asia where it was made with fish preserved in salt, vinegar and rice. The rice was discarded after the process. This method spread to China, and then Japan. The method became obsolete as better methods of preservation were available and the recipe was modified into what we know as Japanese sushi today.
