Depends on what carrier you want? Specify a bit more! But if you want the ability to customize your phone to the maximum extent then Android is your go. If you just want a list of apps and a closed environment then iOS is your go.
usually there is a "settings" menu in the messaging screen and you can make a signature but it usually has to fdo with the type of phone you have. Try looking at the starting book that you get with the phone. it might be in there.
