A pilgrim is a person on a pilgrimage, that is, a spiritual quest of some sort. Usually, they are visiting some holy landmarks (ie Mecca in Islam, Jerusalem in Christianity and other religions, etc.).

The pilgrims from colonial times were coming to the "New World" in a search of religious freedom, so they weren't visiting as much as they were settling somewhere where they wouldn't be persecuted for their beliefs.

Canterbury was the big pilgrimage site, to visit the scene of Becket's murder in the cathedral. That is where Chaucer's pilgrims were going. The village of Walsingham in Norfolk is famous for shrines dedicated to the Virgin. Other sites include Holy Island, or Lindisfarne, off the coast of Northumberland, and many of the major churches such as York Minster. The traditions of pilgrimage continue today, though with modern transport it can be a day trip on a coach!
