This is a common occurrence when a house is wired. A good electrician will always install a three wire cable from the switch to the light fixture. Without knowing what type of fixture will be installed when the house is roughed in, it is better to err on the safe side. A lot of bathroom fixtures have combination fan and light. The red wire is for the fan so that is can be switched independently from the light, if that is the type of fixture that is installed in the bathroom. The switch will be a duplex switch that is used when this type of combination is used. Other times a two gang box will be used and one side will be blanked off, the cover being a switch blank two gang cover plate. For the duplex switch the cover plate that is installed will be the same cover plate that is used for duplex receptacles.

One possible reason for having both red and black hot wires

Either the red or the black which you see in the box could be the "hot traveler" that comes from the circuit breaker for the branch circuit that is feeding the lights on that floor of the house.

If the black is the traveler it should be connected to the light switch via another wire that could also be black, but it could be red.

If the red is the traveler it should be connected to the light switch via another wire that could also be red OR it may be black OR it may be white with a colored tag at each end to show it carries a "hot" connnection to the switch.

Once you know which hot wire is the traveler then, using a proper test instrument, it should be easy to check that the other wire - the red or the black - is the "switched hot" coming from the switch. That is the wire which should be connected to the black wire of the lighting fixture.

A lot of bathroom ceiling units have multiple things that need to be switched on/off independently--fan, light, heater. So there will be individual hot/switched wires from the switches to the ceiling unit. a common way to do this if the unit has two switched things is to use 3 wire plus ground, where there are both a red and black wire. If you do not need two switched things, the red wire is spare and can be capped.

As always, if you are in doubt about what to do, the best advice anyone should give you is to call a licensed electrician to advise what work is needed.
