I have the same name and have found that it is exceptionally difficult to track down! My own research has lead me to think that the name probably comes from the village of Latcham, Somerset (England). It used to be quite common for people to take their geographical origin (i.e. place of birth) as a surname and my great grandmother told me that her own family had been resident in Somerset several generations ago. The 'Latch' part is likely derived from the Anglo-Saxon word Læcc- 'boggy stream'. There is indeed a stream running parallel to the village, which can be seen on Google Maps, if you are interested. Personally I like having an unusual surname, even if people always spell and pronounce it wrong!
