There are two, quite independent creation stories in the Book of Genesis, the first (written by the 'Priestly Source') is in Genesis 1:1-2:4a) and the second (by the 'Yahwist') is in Genesis 2:4b-20. Adam and Eve are definitely only in the second of these stories, where Adam and Eve were indeed the first humans.
The first story says that God created man (both male and female) but does not say who they were or how many. However, Leon R. Kass (The Beginning of Wisdom: Reading Genesis) says we must scrupulously avoid reading into the second story any facts or notions taken from the first, and vice versa.
The second creation account must be read as a whole, to see that Adam was the first man, then much later Eve was the first woman. Adam is created before all other living things (2:7), and there is no female for Adam before the creation of Eve (2:22), so she must be the second person on earth in this story. Kass also says that we should treat the story of Adam and Eve as a myth, not as an account of a historical, blissful existence we once enjoyed but lost.
