The duties of the priest in The Bible was to offer and receive items for sacrifices to God on their behalf, take care of the sacred item in the temple, intercede on behalf of the people, read the scrolls (books of moses & the prophets), ascertain the health status of sick and relieved people, annoint and ordain Kings, advisory roles (seer) to the kings, settle disputes in accordance to their jurisdictions as laid out by Moses, co-ordinate feasts (Harvests, Passover, e.t.c.), see the affairs of the Tabernacle, e.t.c.
The kohanim were the ones who offered up the sacrifices to God (Leviticus ch.1-5).
