Caviar is processed fish eggs taken from the female sturgeon or salmon (and sometimes other fish but they're not as popular). It's salted and brined and is absolutely fantastic sprinkled on eggs or toast points. Put some plain creamed cheese on a slice of slightly-toasted bagette and spread with a small amount of caviar. Chase it down with a good Chardonnay and you've got a party in your mouth.

pairs very well with champagne and vodka or high acidity wines that will help cut through the saltiness and cleanse the palate. there are some great caviars that are farmed very well and not only are they very sustainable they are delicious. i have experience with divine caviar from vancouver island and the quality is amazing.
