Latin Christianity, the version which spread in the western part of the empire and later came to be called Roman Catholic, was centred on the Bishop of Rome.

Another very important episcopate was Milan. It rivalled Rome because it was the imperial capital of the west and because of the work of two important fathers of the church: St Ambrose and St Augustine.

It's just Catholic, not Roman Catholic. Roman is an epithet first commonly used in England after the protestant revolt to describe the Catholic Church. It is never used by the official Catholic Church.

The Catholic Church has been centered in Rome since St. Peter went there in the first century. He was martyred there, and is buried beneath the high altar of St. Peter's Basilica. You can still go to the Vatican, take the stairs down and view the tomb right now. It is still centered there, and will probably continue to be so until Our Blessed Lord comes back.

Originally the term Catholic Church referred to the version of Christianity which subscribed to the Nicene creed, which was a particular interpretation of the trinity and was opposed to other interpretations of the trinity by other versions and sects of Christianity which existed at the time. It had two branches, the western one (Latin) and the eastern one (Greek). After these two churches split the term Catholic came to refer exclusively to the western one, which was centred on and is still centred on the Bishop of Rome. The eastern one came to be called Orthodox. The term Catholic means universal.

The term Roman Catholic Church and Roman Catholicism is used in English. Elsewhere it is called Catholic Church and Catholicism.
