On a 1986 Chevy Celebrity V6 the sensor that operates the gauge or temp light is on the head by the firewall at the rear of the engine. There is another temperature sensor on the water outlet. There is another temperature sensor that controls the cold start injector it is on the intake manifold next to the fuel rail. Fuel injected models only.

The fan switch, on your 1986 Chevy, is located on the fan of. The switch will have three wires going to it, from the temperature sensor.
I believe it is on the front of the intake manifold and it should be the second largest one. I believe the largest is the air charge temp sensor
