You can't fully disable the ESP on any model except the SRT, without modifications. To put the ESP in a limited-mode, press the ESP button (next to the emergency flashers). If I remember right, you'll see "Mr. Squiggles" which lets you know that it's partially disabled. That's the best you can do without modifiying your car. -snip- I have an SRT-8 and all I have to do is hold down the button for a few seconds, the light flashes, and then I can play all I want...
