The Ford Jubilee has three areas for fluid. The transmission has a filler cap near the gear shift. The hydraulic fluid has a filler cap under the edge of the seat and the differential has a filler cap behind the seat. There is a small dipstick on the right hand side to determine hydraulic fluid level.

Same place you check the fluid level.
Locate the reservoir: Jack the rear of the car so that the filler plug becomes higher than the fluid level: Fill and replace the filler plug:
Hydraulic system oil is added through the filler cap under the seat. The oil level check plug is a 1/4 inch pipe plug located on the RH side of the axle housing a little ways above the floorboard about in line where your heel would be if you were in the seat.
Under the seat is a dipstick simply unscrew it and check the level.

It should have eithert a view port or a dip stick style level indicator on hydraulic reservoir
