The 2000 Beetle has a hydraulic clutch, which is self-adjusting. It's not self-BLEEDING, though, so if it feels real mushy you first figure out where it's leaking--air's getting in there somewhere--fix the leak, then bleed it like it was a brake system.

I've heard it is easy. Buy the part for $65 at the dealer, remove the inside door panel and the new part pops in. I have not tried it yet, but am going to attempt this weekend. I have a funny feeling I'll break something else during the process.

could be a brake switch problem My daughter has a 2000 Beetle and she's had this happen twice. We just found out there is a recall on the brakeswitch that causes this to happen. There have been a couple of recalls to the brake switch. You may want to contact your local dealer and have it replaced.
