Yes Diabetics can eat couscous a 4 oz portion would be okay but a better choice would be bulgur wheat salad which is higher in fiber and lower in carbohydrates. Chef Vicki

The eat well plate is a pie chart that shows you how much of different types of food you should eat in your daily life eg. chocolate and sugars are not a huge part of the eat well plate and the fruit and veg part is bigger because they are better for you.
