Ackee and saltfish. It's the national dish, makes an excellent breakfast along with a little calaloo, and bammy or breadfruit. Ackee grows on trees all over the island and when the fruit is ready it the red exterior opens on its own to reveal creamy yellow arils of the the three big black seeds. Ackee needs very little cooking and has a subtle flavour, the way the saltfish (usually imported salted cod) is prepared, is what helps give the dish it's flavor.
