Actually, the only foods that could be safely handled without wearing gloves are those foods that are raw and about to be cooked. Any ready-to-eat food could be contaminated by ungloved (or even gloved) hands if those hands (or gloves) were themselves contaminated.
That is why appropriate handwashing and sanitizing and the proper use of gloves is so important in food service.
So, if you need 3 foods: raw beef being prepped for cooking, raw chicken being prepped for cooking and raw vegetables being prepped for cooking.
The most pressured customer I handle before is giving an alternative item when the item wants to be ordered is sold out.
On unwashed hands. Handle raw food, then handle cooked food. On unwashed implements. (knife, fork, chopping board etc.) Chop raw food, then chop cooked food. By placing raw food above cooked food in a storage area ( EG Fridge) so that juice, blood etc drip on the cooked food below. By using a scrubbing brush to clean with, spraying the bacteria on the dirty item all over the place while scrubbing. (A nail brush should never, EVER, be used in a kitchen!) Flies.
In order to maintain food hygiene one must wash their hands every time , their hands are in contact with the food item. This is because your hands comes in contact with various harmful microorganisms which can be transferred to the food. You must never risk your and others hygiene.
Most likely: 1) Uncooked meat/eggs 2) The person with food poisoning didn't wash their hands 3) Non-food item in your dish These are my best guesses... so I hope they helped.
