In the fairytale Minos did not turn into anything. But he wished that everything he touched would turn into gold, and he could not eat or drink. But one day he touched hid daughter and she turned into gold!
Dionysus (not Apollo) granted Midas the ability to turn everything he touched into gold, because he treated his (Dionysus') old friend Silenus so hospitably. Midas was delighted at first, but this changed when he found that his food and drink turned to gold too, as well as any people he touched, including his own daughter.

I'm not sure what would make you think it didn't. Remember that in story telling, some things are assumed. Once it was established that everything he touched turned to gold, you don't need to keep saying that the things he touched turn to gold. It can be assumed.
Helium at room temperature is a gas. You can certainly put your hand in a container of helium and touch it although you would not feel anything.

With arrogance touched by ignorance, in that Midas did not heed Dionysus advice and Dionysus did not warn Midas outright that his touch of gold would affect food, water and living beings as well as things he wanted turned to gold.
