We need to eat to get protein vitamins etc and while our stomach digest it we will throw our non protein or vitamins etc and it will turn into poop

Once you digest food the enzymes in the intestine will digest the nutrients into small components. So that they could be absorbed by the intestine into the bloodstream, and throughout the body in order to be reused by the body cells.
They digest ALL nutrients. Otherwise you would die because you would get no nutrients.
The ascending colon carries fecal matter to transverse colon. Along it's tract, bacteria digest the fecal material to release vitamins, nutrients and water.
Vegetarians get al their requirements of nutrients from starch in grains, priteins frim pulses ,most of the other nutrients from vegetable greens and oil suluble vitamins from diary products.
