You can test for doneness by turning the loaf out of the pan and thumping the bottom--it should sound hollow. If it seems too soft bake for another 10 minutes and test again. Very dense whole grain breads may take longer. Once the bread is done let cool completely on a wire rack.

You should to go the manufacturer's web site for your specific bread machine, and download the instruction manual for your specific model. On a Panasonic bread machine, the bake-only setting is used to bake cake or quick-bread. Typically, those are breads that do not require a rise time, as there is no yeast. The bread rises due to baking soda or powder. On a Regal machine, the "bake only" setting is for those times when you try a recipe and for whatever reason, your bread still is not done. You can select "bake only" to add more baking time for the loaf. So in that case, no, there is not rise time. The machine just heats up and acts like an oven, and bakes your loaf for more time, (whatever you specify, 10 minutes up to several hours.) "Bake Only" can mean different things to different manufacturers. You really need to read the manual for your specific machine.
