Sedimentary rocks are probably most vulnerable to weathering because they are formed from cemented (sometimes loosely) particles of other rocks.
Onion skin weathering is an ongoing process. How long it would take for a specific rock to completely weather would depend on its size.

No rock is "weather proof." All forms of rock will eventually be worn away (eroded) by the action of the weather.
