For a number of reasons. Jacob's mother Rivka made it clear that he wasn't to stay with Lavan forever (Genesis 27:45). Jacob desired to return to his parents (ibid. 31:30). His beliefs and those of Lavan were not identical (see Genesis 31:53). God told him to return to Canaan (Genesis 31:3). Jacob knew that Lavan was liable to try to cheat him out of everything (Genesis 31:31 and 31:42), a fact which Lavan admitted (Genesis 31:43). Jacob did not want his children to continue growing up in the environs of the idolatrous Lavan.
