During WW1 everyone rotated between who had sentry duty (but not necessarily the officers.) So basically any private was up for grabs when it came to sentry duty.

Because a sentry was pretty much the only difference between knowing an attack was coming and being able to prepare for it, and not knowing thus not being prepared. It was crucial to the entire unit or army that the sentries do their job.
