According to a local Iowa Pizza Chain they invented, the Taco Pizza, after a franchisee suggested adding tacos to the menu. According to a Wikipedia source which is a paid advertisement.

However, the Taco Pizza was in fact invented by Food Consultant Wayne Lynn, who was responsible for several original pizza recipes, and innovations. The Taco Pizza was originally called the Burrito Pizza, until Mr. Lynn renamed the recipe the Taco Pizza after market research showed that the new title appealed to more people. Because Mr. Lynn dealt primarily with grocery and convenience stores offering deli, or "take and bake" pizza, it is possible that Happy Joe's may have been the first restaurant to offer the Taco Pizza, but it would have been a copy of Mr. Lynn's recipe found in stores. The Taco Pizza was easily Mr. Lynn's most successful original pizza recipe.

The taco is one of several traditional foods of Mexico, and its invention or creation would have occurred before written history.

The Spanish name was applied by the conquistadors under Hernan Cortes, who were the first Europeans to consume them (as documented by one, Bernal Díaz del Castillo).

The hard, U-shaped corn meal shell was first described in a cookbook authored by Fabiola Cabeza de Vaca Gilbert (published in 1949 in Santa Fe, New Mexico). this does not answer the question... "The first "taco bash" in the history of New Spain was documented by none other than Bernal Diaz del Castillo. Hernan Cortes organized this memorable banquet in Coyoacan for his captains, with pigs brought all the way from Cuba. It would, however, be a mistake to think that Cortes invented the taco, since anthropologists have discovered evidence that inhabitants of the lake region of the Valley of Mexico ate tacos filled with small fish, such as acosiles and charales. The fish were replaced by small live insects and ants in the states of Morelos and Guerrero, while locusts and snails were favorite fillings in Puebla and Oaxaca."

Nobody knows for sure. The current usage for the word taco, originated in Mexico. The taco existed before the settlers came to America. Bernal Díaz del Castillo documented the first taco feast enjoyed by Europeans.

I, Michael RC Williams, invented taco salad in 1991 in 3rd grade. It was taco tuesday, but i didnt like biting into the hard taco. so i broke my shells over the veggies and everyone else copied me. taco tuesday became taco salad tuesday. thanks to me. you're welcome humanity.
