Quebec as a province has french and Canadian (the true meaning of Canadian is what we now call french Canadian) heroes. Here are some :

French

Jacques Cartier. Cartier left Saint-Malo and (re)discovered Canada the 20 April of 1534. He took the land in the name of the king of France, François Ier (Francis the first).

Louis de Buade, comte de Frontenac. The count of Frontenac was the governor of New-France and protected the colony against Iroquois and the Americans at the battle of Quebec in 1690. There he shout to the Massachussets governor : "Quant à votre général, qu'il sache que je n'ai point de réponse à lui faire que par la bouche de mes canons et à coup de fusils" or "And as for your general, I have no reply other than from the mouths of my cannons and muskets".

Louis-Joseph de Montcalm. The marquis de Montcalm commanded the Fench force against the English during the Battle of Quebec of 1759. As for the general Wolfe who commanded the English force, he died during the battle.

Canadians

Louis-Joseph Papineau. Papineau was a deputy of Lower-Canada (Now know as Quebec province) and leader of the patriot party. He was one the leader of the triple nation (French, English and Irish) who fought for the liberation of Lower-Canada. A revolution that ends with royal repression by Englishmen.

Jos Montferrand. Montferrand war a logger and a strong man who used his force to protect the french canadians workers. The legend tells he used to kick the the ceiling of each tavern he visited and he once took and Irish by the ankle and hit 150 other Irish with him, throwing all of them in the river.

Dollard des Ormeaux. des Ormeaux is supposed to have protected Montreal from a giant Iroquois invasion in 1660. Only one Huron Indian came back to tell the story. But like many other heroes, nobody know where the real story stops and the legend starts. The catholic clergy used to glorified those men to give heroes to the people so that they continue to fight in order to stay alive as a nation.
James Wolfe was posthumously given the title 'The Hero of Quebec.' This was because he played a vital role in the victory over France at the 1759 Battle of Quebec.
