The Third Estate consisted of all citizens who did not belong to the nobility or the Church, so basically we are talking about 95% of France's population in the 18th century.
The main issue they had with the Crown that they paid most of the taxes without having anything to say about - or any reports on - how the money was spent (it is often said, but not true, that the nobility and the Church were exempt from taxation in pre-revolutionary France. Technically that was true, but both these Estates paid yearly and usually considerable amounts in 'voluntary' payments to the Crown).
The second issue was that the Estates General was almost never convened to be consulted on governing affairs unless - usually financial - problems of the Crown had already gotten out of hand. The last meeting before 1789 had been over a hundred years ago.

Basically the 3rd state were supporters of the french revolution, they made up 98% of the population. The 1st and 2nd estate were the King and clergy. They all lived luxury lifestyles and didn't pay taxes. They didn't try to help the 3rd estate who were in so much debt of paying taxes. When they were making decisions, the 1st and 2nd estate always outvoted the third estate. As a result, taxes were increased! This is why the 3rd estate wanted to become a republic, where decisions of the 3rd estate would stand out more and they could have more of a say in various issues like taxes.
