Please note that the Dominicans and Franciscans are still very much alive and present in the Church. The Dominicans were a religious Order of preaching friars (Order of Preachers is its official name) and two other Orders started by St. Dominic in 1205 A.D., while the Franciscans are various religious Orders of Friars and Poor Clares (classically three) founded by St. Francis 1209 to 1223:

.

from the Catholic Encyclopedia:

As the Order of the Friars Preachers is the principal part of the entire Order of St. Dominic, we shall include under this title the two other parts of the order: the Dominican Sisters (Second Order) and the Brothers of Penitence of St. Dominic (Third Order). First, we shall study the legislation of the three divisions of the order, and the nature of each. Secondly, we shall give an historical survey of the three branches of the order.

It is customary to say that St. Francis founded three orders, as we read in the Office for 4 October:

Tres ordines hic ordinat: primumque Fratrum nominat Minorum: pauperumque fit Dominarum medius: sed Poenitentium tertius sexum capit utrumque. (Brev. Rom. Serap., in Solem. S.P. Fran., ant. 3, ad Laudes)

These three orders --- the Friars Minor, the Poor Ladies or Clares, and the Brothers and Sisters of Penance --- are generally referred to as the First, Second, and Third Orders of St. Francis.

Whats the difference between a Dominican monk and a Franciscan monk?

The Dominicans and Franciscans were mendicant orders established in the 13th century. The friars were prohibited from owning more land than needed to house themselves and never became substantial property owners or owners of great wealth, as other orders did. The Franciscans in particular, advocated literal obedience to biblical commands by selling all possessions and giving to the poor. The Dominicans had as its objective the elimination of heresy by preaching. Education and learning were cornerstones of its efforts and by 1234, well over half of the doctors of divinity at the Sorbonne are thought to have been Dominicans. Actually, neither are monks as they are not confined to monasteries. They are referred to as friars.
