I think that there are more than 3 major figures. But I think (and this is my opinion) if you had to narrow it down to the top 3 it would be:
1. Abraham
2.Moses
3. King David
There is only one central figure in Judaism, and that is G-d. While there have been many great human figures whom we revere--for example, the Patriarchs and Matriarchs, Moses, and all of the prophets--for us, their importance lies in the fact that by studying their lives and teachings, we learn more about how to serve Him to the fullest extent of our abilities, and draw close to Him with love and reverence.
In Judaism's long history, there have been literally thousands upon thousands of important people. Here is a VERY short list (in no strict order):
Abraham, Isaac, Jacob, Sarah, Rebecca, Rachel, Leah, Judah, Simeon, Joseph, Benjamin, Ephraim, Menasseh, Moses, Miriam, Aaron, Joshua, Samuel, Hannah, Isaiah, Nehemiah, Elijah, Elisha, Ezra, Ruth, Esther, Deborah, Chuldah, Judah Maccabee, Hillel ,Shammai, Ben-Zoma, Elazar ben Azaria, Akiva, Bar Kochba, Rashi, Rambam, Ramban, Josef Karo, Baruch Spinoza (controversial), the Ba'al Shem Tov, Theodore Herzl, Leo Baeck, Eliezer Ben Yehuda, Morecai Kaplan, David Ben Gurion, Haim Weitzman, Shimon Peres, Hannah Sennesh, Yitzhak Rabin, Golda Meir, Binyamin Netanyahu, Ehud Barak, Albert Einstein, Debbie Friedman, Naomi Shemer, Yehuda Amichai

Any list of noteworthy names associated with the early history of Judaism would have to include: Abraham, Isaac, Jacob, Joseph, Moses, Aaron, David, Solomon, Sarah, Rebecca, Rachel, Leah. To arrange them in order of relative 'importance' would be a matter of much debate, however. You would definitely get different answers from different people.
