Because if they do believe in Islam they'll have to become Muslims. Since Islam claims that Muhammad was the final messenger from God, accepting Islam would mean that you accept the finality of Prophet Muhammad's message and have no reason to remain a Christian or Jew.
On the other hand Muslims do not have that problem. They believe in all prophets as messengers from God who came with the same message (there is no god but God) and believe each prophet was sent for a particular group of people and for a particular period of time. Whereas, Muhammad is the final messenger after whom no guidance from god through a messenger is needed. He is the seal of prophets. His message is complete guidance for all mankind.
However, not all people of other religions don't believe in the prophecy of the prophet Mohamed or don't believe in the holy book of Quran. Some of them believe in Prophet Mohamed and believe in God revelation of Quran to him but they don't convert to Islam for some reasons that they may have.
