When plant cells are in a hypotonic environment--that is, surrounded by pure water--water will enter the Plant cell. The plant cell then becomes turgid which is appealing to customers. Which would you buy? A shrivelly stick of celery? Or a nice big, fresh looking stick. Even if the two sticks of celery are of the same freshness, the water will make one look more appealing than the other.

As we know in vegetables market fresh fruits & vegetables are kept exposed to normal atmosphere, due to solar heat in the atmosphere, the water content in these fresh fruits & vegetables get decreased causing them dry & perish.
This spoils their quality and reduces their shelf life.
When water is sprinkled over these fresh fruits & vegetables water covers their outer surface, due to solar heat in the atmosphere water gets evaporated & their surface get protected.
If this process is continued in intervals then shelf life of these fresh fruits & vegetables can be increased up to sufficient time period.

In order to keep fresh fruits and vegetables fresh little water is usually sprinkled on it. Produce will go bad if it watered too much. Sprinkles are installed to ensure appropriate amount of water is available to different produce items.

It's to keep the fruits/vegetables fresh so they don't decompose as fast. No one wants dry vegetables that have been sitting in the supermarket all day. Gross!
