Since they are pitted against opponents of equal weight, the shorter they are, the more muscle they pack in, thus much more stronger. Strength is a key factor in wrestling.
Wrestling is an effective style of combat, and when used by a short stocky person, it can be downright lethal. With their lower center of gravity, they can generate lifting strength with little effort. A 5'5 160 pounder can easily take down a 6'0 180 pounder. Once they mount, its hard to escape since their weight is condensed into a tiny frame. Think of an anvil.

Sure, many professional wrestlers have amateur background but being an amateur wrestler doesn't automatically mean you'll be capable to be a professional as amateur wrestling is competition kind of thing and professional is acting.
