Horses are called noble due to the unique nature and role in the society. Horses are not eaten and are commonly used for transportation purposes for the noble class of people since the early days.

Horses exist for the same reasons most anything else exists, to fill a need in nature. Horses in the very beginning were small browsers that ate low hanging leaves and brush, which kept that brush under control. Eventually as forests gave way to grasslands horses evolved into a taller grazing animal that ate grass. By eating the grass and then depositing their manure on the same land, horses kept the lands in a cycle of renewal.

A horse is not called a horse it is just a modernised name, the binomial name for the horse is Equus ferus, the 'horses' are called equines.

Because God wanted them to! Also, they are meant for us to use for good, whether that be working or just riding for pleasure.
