It is bacteria that causes it to go sour.
The bacteria uses up the milk, then they produce acids that cause the milk to spoil.
Spoiled milk includes a foul smell and lumpy chunks. If milk is spoiled for too long, the milk may even turn green.
Milk is considered a very good growth medium for microorganisms.
This is due to the neutral pH that is suitable for spoilage organisms as well as the protein, fat and carbohydrate content of milk.
This makes it the ideal growth medium and when microorganisms multiply the pH is lowered (due to increase in lactic acid) and the protein is damaged. This causes the milk to go sour (due to lactic acid build up) and curdle (low pH along with damaged protein).
Because it breaks down the nutrients.. while its breaking down the nutrients, different smells seem to disipitate
Any milk can go sour.
It takes about anywhere from 5 - 6 weeks for milk to go sour
The souring and curdling of milk is caused by bacteria.
Pasteurisation kills any microorganisms (e.g. bacteria, fungi) that might be in the milk that could cause it to go sour or spoil.

Tartic acid is present in sour milk. Generally the source of tartic acid is lemon, therefore sour milk gives taste of lime. Therefore it is clear that tartic acid is there. Sometimes when we want to make Paneer from milk, we put 1 or 2 miligram tartic acid to make milk separate from water.
Leave it to get sour, it will then go solid - like cheese!

On the milk bottle there should be an experation date. Some time after the experation date it shold go sour. But dont wait too long!!
