Laziness ain't in it. Many multiple subjects may be understood as a single thing. We say three boxes of cashew nuts is enough. The true subject of the sentence is a certain quantity of cashews, not the number of boxes it comes in.
You might better ask, Why do so many people insist on pluralizing a properly singular verb before a plural predicate nominative, saying for example What we need are more cashews instead of What we need is more cashews.
