Stallions are actually the non-castrated male horses, Geldings are castrated.

The horse's testes are responsible for creating hormones that result in more erratic behaviors. This is piqued when a stallion sees a mare that it wishes to breed with. As a result, these horses are castrated so that they are more even-tempered, calm, well-behaved and less aggressive. In this way they become good working animals.

There are two main reasons : 1) The horse would not make a good stallion 2)the stallion is to difficult to handle (ex. Fargo)
