Generally, there is moisture in the car and it is condensing inside on the windshield. This could be due to getting in the cab during rain and the moisture evaporating from your clothing is condensing. Much less common is a leak in the heat exchanger that allow moisture into the cab area. Had one instance where the heater core on my Ford Ranger leaked coolant into the cab as an indoor fog. Weird.
