The best potatoes for mashing in my opinion are Maris Piper,they have a fluffier texture and make great MASH.First peel the potatoes and cut them in half. Place them in cold water with a sprinkle of salt and bring to the boil checking after about half an hour with a fork to see if they are cooked thoroughly (very important) Drain well and allow them to evaporate for a few minutes. Then mash thoroughly before adding a little milk or cream depending on number of potatoes used and according to taste. Add ground pepper and a sprinkle of nutmeg again according to taste. If preferred a small amount of finely grated cheese can be added at this stage but don't over do it! Mash again thoroughly for perfect mashed potato and serveAnother opinionI personally prefer Yukon Golds for mashed potato. They have a buttery consistency and taste that whips easily and eliminates the need for added butter.And yet another...Definitely real ones. My mom uses russet potatoes (the big brown ones), but we throw in red ones and the yellow ones too. Some people prefer red potatoes. It doesn't really matter.
