Because it would be pointless having a bank holiday on Wednesday lets say. It wouldn't even feel like a holiday because you have work the next two days after. At least with monday you have a longer time off work with not working the weekend.

Why do we have have a bank holiday for whit?

We DO NOT have a bank holiday for whit ! Whitsun is a Christian festival otherwise known as Pentecost which ALWAYS falls 7 weeks after Easter and therefore varies each year. In 2010 Whit Sunday is on 23rd. May; in 2011 it will fall on Sunday 12th. June. Since 1967,in the UK, but not in the rest of Europe, the Whit Monday holiday has been replaced by Spring Bank Holiday which usually falls on the LAST Monday in May and has no religious significance. Many people still wrongly refer to this as "Whit" - thus causing confusion.
