Why can you go 180 degrees east and west but only 90 degrees north and south?

It doesn't work that way. A circle has 360 degrees. As such the cardinal directions can be broken down into 90/180 increments.
For example
North is 90 degrees from West or East, but is 180 degrees from South
West is 90 degrees from South or North, but is 180 degrees from East
