Egyptians left the hearts in mummies because they believed that they would need it in order to enter the afterlife. They also believed that the heart did all your thinking for you, not the brain, and so then they would take the brain out, and I don't think you want to know how they did that, it's pretty disgusting. According to mythology, one of the Egyptian gods would weigh a feather and the mummy's heart on a scale. If the scale was perfectly balanced, the heart was pure and could move on to the afterlife. That is why Egyptians left the hearts in mummies.

they removed the heart and dried the body after it was dried they put the heart back into the dried out body to preserve it for 1000's of years.
