The most significant answer to this might be because they felt they were paying their taxes to someone who would not allow them to have their say in terms of making government decisions. It would be a little bit like a person getting a house with some roommates who ask her to pay rent, but when it comes time for making up the rules of the house, ignoring her opinion. If one were to pay money to a king, as the colonists did, and then the king decided how that person were to live his life without listening to that person's opinion, he would likely be very discontent because of it. The colonists are famed for eventually saying "no taxation without representation" which means that they were unwilling to pay taxes to their king as long as the king wouldn't let their voice of opinion be represented in the royal decision-making. In addition to this, the king was not just taxing them, but taxing them heavily. They were taxed high rates for stamps, trade and tea (to name a few) and the king was also using up the colonists resources for his own ends.
