Probably very few. Sunflower heads are processed at the factory producing the sunflower seeds by the thousands, and in washing, sorting, etc, a great deal of "mixing" takes place. A bag of sunflower seeds probably has seeds from dozens/hundreds of heads in it.
That's an aesthetic choice that only you can make. There is generally no pressing reason to cut down a sunflower once the seeds have matured. Depending on the weather and the variety, the sunflower may even produce additional flower heads.

Sunflower seeds come in a variety of sizes, depending on the cultivar. Many varieties with larger seeds sizes suffer from weak and easily broken heads as it is. If they were any larger, the heads would break off and die before the seeds were fully developed.
