Arabians don't necessarily live longer than other breeds, nearly all breeds of horse live from 15 to 25 years. However since Arabians are smaller on average this may have something to do with it, much the same way a pony typically lives longer than a larger horse.

After years of experience with trail horses I would say that Missouri Fox Trotters have the same number of vertebrae as most other breeds. The notable exception is the purebred Arabian which has one less vertebra than other breeds. Sometimes gaited horses belonging to breeds developed especially to provide horses with comfortable gaits like the Missouris Fox Trotter which can move in a gait where its front hooves have a long stride while hind hooves trot may appear to have a longer body. The Mountain horse breeds like the Rocky Mountain Horse which move with an asynchronous four-beat gait (each hoof strikes the ground separately) can appear to have a longer body than, say a Quarter Horse.

A sagging spine in a horse is typically a form of Scoliosis. Some breeds are prone to it from an early age, such as American Saddlebreds. For other horses it comes on in later years when the horse is no longer working and it's back muscles weaken and can no longer support heavy weights.
