Tea was invented by Chinese Emperor Shen Nung in 2737 BC. One day Shen Nung was boiling water outside when leaves from a nearby bush fell into the open kettle. Before Shen Nung could retrieve the leaves, they began to brew. He smelled the sweet aroma of the mixture and once he tasted it, the world was given tea! Tea is the most popular beverage in the world today-after plain water. It was introduced in Europe in 1610, and until about two hundred years ago, people in many Asian countries used blocks or bricks of tea as money.

Because there are many kinds of tea in China, like black tea,green tea,some tea drinks and so on,and they drink the tea after work for relaxing, anyway, Chinese like the tea just as American like the coffee.

The Chinese believed it was good for health (though no one had heard of anti-oxidants back then), improves digestion during & after meals and helps to 'wash' down greasy food (not washing in the sense of removing oils like using detergent but I think more like detoxification). It is also an important social activity (eg. dim sum or yum cha), with a part to play in major functions eg. the tea ceremony in Chinese weddings.

(alternative answer) Historically, the practice of making tea came about because in the past, people did not have municipal water supplies with reliable, safe water to drink, and by boiling the water, they could kill bacteria or other parasitic organisms that might be in their water. And as long as they were boiling it, they thought they might as well add some plant matter for flavor. The flavor of tea is tremendously bland, when compared to something like Coca Cola or Orange Juice etc., but even so, many people find that a bland flavor is better than plain water. And there are many types of tea, and many flavors that can be added to tea. Tea with sugar and lemon juice is very nice (although one could argue that it is really just heated lemonade).
