Why do all salt water fish taste different but eat pretty much the same things?

I think that the salt water fish taste different because maybe it is cooked a different way or its just like cows chickens and pigs they eat sort of the same stuff and taste different... It doesn't matter what they eat. It's their skin that you're eating. The skin is different.
