Dogs act like their owners for many reasons. It is called the "Mirror Method" for training, where you show them what to do. For example, some dogs dig because they see their owners digging in the garden, so this makes them figure that digging is okay and the correct behavior. It makes total since considering we humans do things. If we do something, shouldn't it mean dogs should be able to, too?
In the dog's mind, if his or her owner does something, it means that it is the correct behavior and that it can/should be copied for approval and/or praise.

It depends how you behave toward your dogs. To your dogs, you are a member of it's pack/family. If you act dominantly towards your dogs and in charge, they will think of you as the pack leader.
Any dog or wolf hybrid will attack their owner if they are mistreated or weren't socialised properly as pups. Optimal windows for socialisation are different in wolves than in dogs though, and depending on the percentage of wolf the hybrid is, it could behave in ways with their owners that are undog-like.

They are not sure what it is. They are either excited about it, or they do not like the noise. My dog will bark at about anything, it's just the way dogs behave.

It is nasty, but dogs like the smell of their owners. That is why some dogs chew underwear and shoes. I don't understand why, but they do.
